Job Duties and Responsibilities:

Job Summary

Comida, a sister concern of Roya International, is currently seeking a Head Chef for one of our refined Indian restaurants in Dubai. As the Head chef of the venue, you will be fully responsible for the day-to-day operation of the Kitchen operation. Your responsibilities are to manage all aspects of the kitchen operation from the development of menus and budgets to controlling food and staff costs for the venue.

  • Develop in conjunction with the Operations Manager and head office the annual operating budget from a kitchen perspective.
  • Develop the menus required for the restaurant in line with guest expectation and brand guidelines.
  • Prepare and follow SOP’s for smooth administration and functioning of the kitchen.
  • Ensure all food production and service is maintained at a high level and ensure quality in both taste and presentation is achieved by all staff.
  • Perform and manage all administrative duties required for the legal operation of the restaurant from a kitchen point of view, including maintaining high levels of food safety, documentation, records and all other required paperwork.
  • Train and manage kitchen personnel and supervise/coordinate all related culinary activities.
  • Estimate food consumption and requisition or purchase food; select and develop recipes; standardize production recipes to ensure consistent quality; establish presentation technique and quality standards; plan and price menus; ensure proper equipment operation/maintenance; and ensure proper safety and sanitation in kitchen.
  • Must be able to spot problems and resolve them quickly and efficiently.
  • Maximize the productivity of the kitchen staff, as well as manage the Junior chef, Chef De Partie and entire kitchen team.
  • Provide leadership in establishing high-quality standards in all kitchen operations and ensure the kitchen is compliant with the regulatory requirements for food handling, sanitation and safety. HACCP compliant.
  • Effectively conduct meetings, menu briefings, and maintain communication lines between all team members.
  • Responsible for recruiting and training junior staff.
  • Managerial and leadership strengths and actively participate in the day-to-day management.

Skills & Qualifications:

  • Minimum of 5 years’ experience in a similar management role, preferably in the luxury hospitality environment.
  • Must have Indian Cuisine experience in UAE.
  • English – excellent oral and written skills
  • Outstanding knowledge of food safety regulations
  • Ability to effectively manage a team.
  • Ability to work independently, thrive under pressure in challenging circumstances and come up with proactive, rational solutions.
  • Ability to establish and retain effective working relationships with colleagues and suppliers/vendors.
  • Excellent organizational and time management skills.
  • Candidate should be immediately available to join the team.

Skills And Abilities

  • Minimum of 3 years’ experience within an office based administrative role.
  • Experience within the pharmaceutical industry is highly desirable.
  • Good communication skills – verbal and written.
  • Demonstrable coordination skills including internal meetings and external customer events and meetings.
  • Strong organizational skills, ability to prioritize and self-manage to meet deadlines.
  • Continuous improvement mindset
  • Well-developed collaboration and teamwork skills
